How to Cook Dry-Aged Ora King Salmon
- Prepare: Remove from refrigerator 10–15 minutes before cooking. Pat dry — the reduced moisture from dry-aging creates an exceptional crust.
- Pan-sear: Heat oil in a cast iron skillet over high heat. Sear skin-side down for 4–5 minutes until the skin is crisp and golden. Flip and cook 2–3 more minutes.
- Roast: Bake at 400°F for 12–15 minutes with herbs, lemon, and butter. Excellent for larger portions.
- Grill: Grill over medium-high heat for 4–5 minutes per side. The high oil content prevents sticking and adds caramelized flavor.
- Sashimi / Crudo: Slice thinly against the grain. The concentrated flavor shines raw with minimal seasoning — a touch of yuzu, sea salt, and microgreens.
- Serve: Pair with roasted vegetables, risotto, or a light citrus sauce. Cook to an internal temperature of 125–130°F for optimal moisture.
